Choux au Craquelin is a crispy French cream puff made with choux pastry that’s topped with a thin crunchy biscuit crust called ‘craquelin’ (pronounced ‘kra-ke-lan’). It comes from the French verb craquer (or craqueler), which means ‘to crack’.
Craquelin consists of a combination of three ingredients – butter, sugar, and flour, and is just like pie pastry. However, during baking, it forms a sweet and delightfully crackly crust that envelops the cream puff beneath. The result? A delectable pastry that’s crispy on the outside, and creamy on the inside.
